XrayUnwrap comes in action only when you click over "Unwrap" button. Once unwrap is done no more computations are done.
Even when you have "live" option active, data rebuild is done only if you add/remove a seem.
How many polygons do you have? UVWEdit viewport draw is really slow, and doesn't use hardware acceleration at its best...
this is a lack of 3dsmax original code. Just to verify please uninstall xrayunwrap and let us know if this lag goes away.
